4 medium bananas (or 2 large bananas)
1 cup non-dairy milk
1/2 cup applesauce
1 tsp. vanilla extract
1 cup whole wheat flour
2/3 cup oat or wheat bran
1 tsp. baking powder
1/4 cup hemp seeds
1/3 cup semi-sweet chocolate chips
Preheat oven to 325 degrees (do not bake hemp seeds over this temperature) and prepare a tin for 12 muffins.
In a large bowl mash bananas. Add non-dairy milk, applesauce and vanilla. Blend well.
In another bowl combine whole wheat flour, oat bran and baking powder.
Add dry mix to wet mix and stir until just incorporated. Then add hemp seeds and non-dairy chocolate chips.
Using a 1/3 cup measure, scoop the mixture into the muffin cups. Don’t be afraid to top these muffins off if you have extra.
Bake for 45-50 minutes. Let cool for 5 minutes.
